Smokeyish stuffed mushrooms

(Serves 4 as a light lunch or starter)

This recipe is so simple, you won’t believe it. Just serve these mushrooms with a little parsley and lemon for garnish and your guests will be ooohing and ahhing and Mmmming at the delicious smokey taste.


4 Flat mushrooms

2-3 pieces day old bread with crusts removed

Half pot of Moorish Smoked Humous

Salt and pepper

Sprig of Flat parsley, to garnish


  1. Set oven to medium heat (180°C)
  2. Wash mushrooms and pat dry
  3. Remove stalks and tidy up overhanging edges with a paring knife
  4. Pop them into an overproof dish
  5. Spoon a generous dollop of Moorish into each mushroom
  6. Sprinkle on breadcrumbs and season
  7. Cook for about 25 mins, until mushrooms are cooked through and breadcrumbs are crispy
  8. Garnish with parsley and serve with a green salad
